Sidamo, Natural Process
Ethiopia is the world’s 7th largest producer of coffee in the world. Ethiopia is the birthplace of coffee cultivation, as Arabica grew wild in the forests of the neighboring Kaffa region. Ethopia’s Sidamo Providence is the most southern state in Ethiopia. We’ve been roasting a lot of Ethiopian coffees lately, and this natural processed coffee comes through amazingly in the cup. While there is not that much information out there about the specifics of this coffee due to the vortex of Ethiopia’s Coffee Exchange, whose noble goal is not only to increase the quality of the coffee exported from Ethiopia, but also to increase the amount farmers get paid for their hard work. We would put this coffee next to any other Ethiopia any day. The cup quality speaks for itself, as wild hints of earth and berries and a delicate jamminess linger on the palate.
